Diner
Williamsburg, Brooklyn

Brotherly Breakdown
Our own take, from eating it. Written by Brotherly Burgers.
Diner serves a good, straightforward Williamsburg cheeseburger built around grass-fed and finished beef, white cheddar, pickled red onions, and lettuce.
The restrained construction keeps the focus on the central ingredients and fits the ingredient-driven identity of one of Brooklyn's foundational restaurants.
Best for
Grass-fed beef, white cheddar, pickled red onions, straightforward restaurant burgers, and foundational Williamsburg dining.
The catch
The current tasting record is incomplete. We remember the burger as good, but do not have enough detailed notes to identify a defining component, specific weakness, or precise execution advantage without revisiting it.
What it's actually like
Diner opened on New Year's Eve in 1998, when Andrew Tarlow and Mark Firth put a restaurant inside a converted Kullman dining car beneath the Williamsburg Bridge. Opening chef Caroline Fidanza built a daily-changing menu around local, seasonal, and sustainably produced food, and that approach became a blueprint for a version of Brooklyn dining now copied far beyond Brooklyn.
The burger fits that identity. Grass-fed and finished beef, white cheddar, pickled red onions, lettuce, and fries. It is not attempting to win through a huge topping stack, a luxury cheese program, or an elaborate sauce. The construction keeps attention on the beef, the cheese, and the acidity of the pickled onions.
We do not have enough detailed notes to tell you that the patty had a specific crust, that the white cheddar transformed the beef, or that the bun was perfectly proportioned. Adding those details now would be pretending to remember a meal more precisely than we do.
What makes the entry worth preserving is the restaurant around it. Diner still publishes frequently changing menus and still feels casual and lived in, which is a large part of why it mattered in the first place.
A good restaurant burger in a restaurant with an unusually important place in New York dining history. We need to go back and write the more complete version.
Strengths
- Grass-fed and finished beef
- White cheddar
- Pickled red onions provide contrast
- Straightforward ingredient-focused construction
Why this score
Diner's burger is a good example of a restrained restaurant cheeseburger built around recognizable ingredients rather than novelty. The current Brotherly Burgers notes support a positive assessment, but not a stronger claim about individual components or technical execution.
A revisit is needed before making the review more definitive.
