Nowon serves one of New York's most distinctive and cohesive fusion burgers.
The Legendary Cheeseburger is defined by its kimchi special sauce. Cooking the kimchi softens the pungency that might otherwise dominate the burger and allows it to cut through the richness instead. The creamy aioli-style element rounds out the acidity, savoriness, heat, and umami, creating one cohesive bite.
It is highly original without sacrificing balance.

What it's actually like
Nowon's burger is made by the sauce. The double smash patties, American cheese, pickles, onion, and bun all do their jobs, but the kimchi special sauce is what takes the burger somewhere almost nobody else does.
Kimchi can easily become the loudest person in the room. Here it works as a counterweight to the richness instead. The acidity cuts through the beef and cheese, while the creamy aioli-style sauce rounds out the funk, heat, and umami.
That distinction matters. This does not taste like Korean ingredients placed on top of a standard cheeseburger. It tastes like one cohesive idea. Nowon actually gets the two sides to collaborate.
The patties develop enough sear and savory depth to stand up to the sauce, while the bun stays restrained and lets the filling remain the point. The result is rich, balanced, and genuinely unique.
Who better to judge Korean fusion than two Korean-fusion brothers?
Nick has been more than four times, including a large birthday dinner at the Bushwick location, and the restaurant works from top to bottom. The Mixtape is one of the best-value menus in New York for the quality. The whipped yuzu ricotta toast is amazing. The garlic honey butter tots are great.
But the chopped cheese rice cakes are the order. They are a perfect bite and the essential non-burger order.
Then there are the vibes: a dark room, rap bumping, and a table full of Korean-American food that does not feel remotely pretentious. Nowon is not just a great burger restaurant. It is one of Nick's favorite restaurants in New York.
