Sailor serves a well-executed restaurant burger built around a well-seasoned patty, cheddar, melted onions, and a grilled brioche bun.
The bun's airiness allowed the beef and cheese to remain prominent, while its grilled exterior added a distinctive flavor. Its size and chew made certain bites too bread-forward, and the rich construction would benefit from a brighter or more acidic counterpoint.
Best for
Well-seasoned restaurant burgers, grilled brioche buns, cheddar, deeply softened onions, Fort Greene brunch, and April Bloomfield's cooking.
The catch
The brioche bun is airy but somewhat large and chewy, creating excessive bread presence in certain bites. The beef, cheddar, onions, and brioche also need a brighter or more acidic element to interrupt the richness.
What it's actually like
Sailor is April Bloomfield's neighborhood bistro in Fort Greene, a Happy Cooking Hospitality room built on elevated versions of familiar dishes. The Sailor Burger fits that idea. It is a cheddar-and-onion burger distinguished by attention to the bun and the seasoning rather than by a large topping stack. Both of us ate it at brunch in February 2026.
The meat was great, and it stayed the central flavor of the burger rather than getting covered by what sits on top of it. The cheddar complemented it, and the melted onions were unusually soft and loose, closer to a deeply cooked onion preparation than to distinct slices, adding sweetness and richness.
Grilling the brioche was the most distinctive choice here. It gave the bread real flavor and character that a standard soft roll would not have, and the airy interior left enough room in the bite for the beef and cheddar to stay clear. That airiness genuinely helped.
The problem was the combination of size and chew, not the airiness itself. The bun was large enough that some bites asked for more chewing than the filling justified, so the bread grew more noticeable as the burger went on. The same structure that let the beef and cheese show also made parts of the burger feel less efficient.
One unresolved detail: our notes raised the possibility that the bun came from She Wolf Bakery. We have not been able to confirm that, so treat it as a question rather than a fact.
Ordering notes: the burger currently appears on the brunch and lunch menus, not the dinner menu, and Sailor cautions that daily availability can differ from its posted menus. The current menu lists melted onions, cheddar, and fries without identifying the beef or the bun, so the grilled brioche described here is what we ate.
