Shy's collaboration with Stone & Skillet delivered a very good English-muffin burger, with exceptionally juicy, well-cooked beef and a generous amount of gooey cheese. A spicy coarse-mustard sauce gave the rich build a welcome kick, and the whole thing was ridiculously well balanced. Shyan Zakeri knows how to make a damn good burger.

What it's actually like
Shyan Zakeri began serving burgers from his apartment in 2021 before taking Shy's Burgers to pop-ups around New York. His cooking grew out of a fondness for the greasy, cheesy burgers of his Los Angeles upbringing.
For this collaboration at The River, Stone & Skillet supplied the English muffin. It was a solid choice, paired with exceptionally juicy beef that was cooked well. The cheese was distinctive and generously applied, giving the burger a heavy, gooey richness.
The coarse-mustard sauce was particularly effective. Its spicy kick brought balance to that richness, with raw onion and pickles completing the build. The combination delivered plenty of indulgence without losing the contrast that made it enjoyable, and the whole thing was ridiculously well balanced.
This was a very good pop-up burger, with the juicy beef, gooey cheese, and mustard sauce providing its strongest qualities. Zakeri knows how to make a damn good burger.
One note for anyone looking for it: this was a one-off collaboration at The River, a cocktail bar on Bayard Street in Chinatown, and Shy's has no fixed address or hours. Its next appearance is announced on Instagram.
