Brotherly Breakdown
Written by Brotherly Burgers
Tørst's burger is better than a beer bar burger has any obligation to be. The patty was good and well seasoned, which covers the two things most bar burgers get wrong.
What sets it apart is the topping pairing. Smoked tomato jam with pepper jack is not a combination we have run into elsewhere, and it worked.
Best for
Dry-aged beef, smoked tomato jam, pepper jack, unusual topping combinations, and craft beer in Greenpoint.
What it's actually like
Tørst is Jeppe Jarnit-Bjergsø's craft beer bar in Greenpoint, from the Evil Twin side of the Bjergsø brewing family, with a large rotating draft list and a serious bottle selection. The burger is a real menu item rather than an afterthought, and the restaurant currently presents it as a dry-aged Pat LaFrieda patty with pepper jack, smoked tomato jam, sprouts, and onion on a toasted brioche bun.
Our notes cover three things. The patty was good. It was well seasoned. And the smoked tomato jam against the pepper jack was really unique.
That last one is the reason to order it. Smoked tomato jam is not a standard burger condiment, pepper jack is not a standard burger cheese, and putting them together produces something we have not encountered anywhere else in the city.
We should be plain about the limits of this write-up. Those three observations are the entire record we have, and all three are positive. We did not write down a weakness, and we are not going to invent one so that the review looks balanced. What we can tell you is that the fundamentals were right and the toppings were genuinely unusual.
