Beefbar's Truffle Wagyu Burger looked considerably better than it tasted. The beef is quality and it was cooked well, and it was very underseasoned, which flattened everything built on top of it.
The larger problem is that every component points the same way. Mushrooms and truffle bring earthiness, caramelized onions bring heaviness, and nothing cuts through any of it, so each bite arrived the same as the last. The bun was heavy, flaky, and bready, which made an already monotonous bite unrewarding.
Best for
Truffle, mushrooms, comté, rich earthy flavor profiles, and steakhouse atmosphere.
The catch
The flavor balance is uniformly meaty and earthy with nothing to cut it. Combined with an underseasoned patty, every bite is the same and none is rewarding.
What it's actually like
Beefbar is an international steakhouse group founded in Monaco, and we ate at the Tribeca location. The Truffle Wagyu Burger is truffle mayo, au jus mushroom, caramelized onions, and comté, served with Parmesan and truffle fries.
Some of it is genuinely good. The beef is quality and it was cooked well. We are not normally truffle people and the truffle mayo was really solid, bringing a hint rather than taking over. The mushrooms on their own were fantastic.
Then it comes apart, and the seasoning is why. The patty was very underseasoned, and salt is what keeps components legible against one another. Without it, everything merges.
What it merges into is one note. Mushrooms and truffle are both earthy. The caramelized onions are heavy. There is nothing acidic, sharp, or bright anywhere in this burger, so each bite arrives identical to the one before it. Uniform is the word in our notes and it is the right one.
The bun finishes the job. Heavy, flaky, and bready, so the bread was working against the bite rather than supporting it, and unrewarding is how we described the result.
The rest of the meal held up. The appetizers, the drinks, and the atmosphere were all great. The burger is expensive even by New York standards, which does not affect how we score it and does affect whether we would order it again.

Why this score
Individually there are good things here, and the truffle mayo in particular is better judged than we expected.
The burger fails as an assembly. An underseasoned patty under two earthy components and a heavy one, with no acid anywhere, produces a bite with no definition and no variation, and a bready bun on top of that leaves nothing to look forward to.
