Café Chelsea serves a very solid French-bistro-style burger built around dry-aged beef, rich Mornay sauce, raw onion, and Dijon.
The beef and cheese sauce create substantial richness, while the onion and mustard provide the sharpness required to keep the complete bite balanced and approachable.

What it's actually like
The beef and Mornay provide the richness you expect from a French-bistro burger. The cheese sauce is creamy and substantial, but the raw onion and Dijon keep the complete bite from becoming too heavy. That balance is the entire appeal.
The onion provides a direct, sharp bite through the beef and cheese. The Dijon adds another layer of cut and keeps the richer components feeling defined rather than blended into one heavy flavor.
The burger is indulgent, but still approachable. It does not feel like a classic cheeseburger wearing a French costume. The Mornay, onion, and Dijon actually change the way the burger eats and give the build a clear identity.
The version we ate used Gruyère in the Mornay. The current menu lists the item as the Chelsea Burger or Cheeseburger and names only the Mornay sauce, so treat the Gruyère as what we had rather than a confirmed current specification.
Nick has been twice. Derek has been once. The latest visit was in December 2025, and the conclusion remains straightforward. This is a very solid all-around burger.
Café Chelsea also makes it easy to order. The burger runs across lunch, midday, dinner, and weekend brunch inside the historic Hotel Chelsea, rather than being hidden off menu or restricted to a tiny nightly allotment. Sometimes the assignment is simply to make a rich burger, give it enough sharpness, and execute the balance correctly. Café Chelsea does that.
