Chez Margaux serves an exceptionally rich and beef-forward burger, but its defining achievement is the texture. The bite moves between softness, crunch, richness, and sharpness without ever losing cohesion.
The flavors are excellent on their own. The contrast between the crisp bun and onions and the softer beef and cheese is what pushes the burger to another level.
Best for
Rich, beef-forward burgers, Gruyère and au jus, crunch and texture contrast, and exclusive destination dining.
The catch
Chez Margaux is a private members' club, which makes the burger near impossible to get without a member connection.
What it's actually like
This is the Frank Ocean Blonde era of burgers. Everyone is talking about it. Experiencing it in person feels nearly impossible. When you finally do, you understand why it is on top of the game.
It is served inside a Jean-Georges private members' club in the Meatpacking District, where the red lighting is luxurious, the crowd is aggressively important, and there is a legitimate chance paparazzi are waiting outside for someone more famous than you. Unless Brotherly Burgers happens to be there.
The burger is inspired by The Fulton's Gruyère Cheeseburger au Jus. It is near identical, but elevated here into the private-club version of that idea. The patty is deeply beefy, perfectly cooked, aggressively seasoned, and insanely juicy. Gruyère and au jus pile on the richness, while the Dijon chili mayonnaise brings enough sharpness to keep everything under control.
But the texture is what separates it.
The sesame bun is crisp, oily, and one of the best burger buns we have had. The crunchy onions add another layer of resistance inside it. You get the crack of the bun, then the brittle onions, then the soft patty, melted Gruyère, sauce, and au jus underneath. The onion-forward flavor also recalls Hamburger America, though this construction is richer and more elaborate.
A lot of rich burgers eventually become one soft, fatty bite. Chez Margaux keeps changing texture as you chew, so every component remains distinct. The crunch does not just make it more fun. It makes the beef, cheese, onion, and Dijon register more clearly. The burger is rich, beefy, crispy, and almost absurdly satisfying.
We were already impressed in February 2026. Then we returned in May and moved it even higher. The aura survived the revisit because the burger itself did too.
The rest of the meal holds up. The tuna pizza with wasabi sauce is great. The cucumber martini is fantastic and somehow tastes better because you are drinking it inside Chez Margaux.
The first time we went, paparazzi were waiting outside while Taylor Swift and Travis Kelce were reportedly inside. That is Chez Margaux. The burger is excellent, and the theater surrounding it makes the whole thing even more fun.

Why this score
Chez Margaux separates itself through texture balance. The crunch of the bun and onions keeps a very rich burger from arriving as one uniform, heavy bite, so each part registers on its own.
The revisit also mattered. The burger did not merely survive the initial aura and exclusivity. It remained genuinely excellent months later and justified a stronger overall assessment.
