Flyfish Club's French onion soup burger is an exceptionally rich and well-executed burger built around a seven-ounce patty, Gruyère, raclette, Parmesan, caramelized onions, and garlic aioli.
The cook on the meat was excellent, and the complete bite delivered the rich, garlicky, cheesy, and sweet profile promised by the construction.
Best for
French onion soup flavors, rich cheeseburgers, Gruyère and raclette, caramelized onions, garlic aioli, and private-club dining.
The catch
The burger needed a sharper counterpoint to its cheese, garlic aioli, and caramelized onions. A raw onion would have provided the additional cut we wanted.
The burger also rotates, and Flyfish Club is accessible only through its private membership community.
What it's actually like
Flyfish Club serves the Bored Ape Yacht Club 2021 of burgers. Rich, exclusive, slightly ridiculous, and, in this case, actually worth participating in.
We ate downstairs at Cattail, one of the darker and more polished rooms in which we have reviewed a burger. It is a private members' club started by a group including chef Josh Capon and Gary Vaynerchuk, so the entire experience carries a level of theater before the food even arrives.
The burger rotates, and the version we ate was built around French onion soup. The cook on the meat was amazing, which matters because this is a burger carrying an irresponsible amount of cheese. The patty could easily disappear beneath the rest of the build, but the beef remained present through every bite.
The Gruyère establishes the French onion soup identity. The raclette adds another layer of melted richness. The Parmesan pushes the savory flavor even further. Then the garlic aioli carries all of it through the bite, and the caramelized onions bring the sweetness.
We really loved the burger. But it was one raw onion away from being a tier above. Nearly every component pushed toward richness, sweetness, or savory depth, and the burger needed one clean hit of sharpness to interrupt that profile and reset the palate. That is not a major reconstruction. It is one missing component separating an excellent burger from a more complete one.
The rest of the food was really solid too. The steak tartare crispy rice is a perfect bite for us, and you should order it without hesitation. The cookies are delicious.
Flyfish Club is easy to dismiss as a private-club concept built during peak NFT insanity. The room certainly carries that aura. The food is much harder to dismiss.

Flyfish Club separates itself through an excellent patty cook and a deeply committed French onion soup flavor profile. The three cheeses, caramelized onions, and garlic aioli create an extremely rich and cohesive bite.
A sharper component would have completed the balance, and a raw onion may have been enough to move the burger higher.
