Gramercy Tavern serves a deeply meat-forward chef burger whose cheddar, crispy bacon, and smoked onion aioli reinforce rather than obscure the beef. The patty was outstanding and well charred, but the airy, dry bun became increasingly prominent and weakened the balance by the second half.

The catch

The bun is airy and dry, becoming increasingly dominant as the burger progresses. The burger is also on the smaller side, which makes the bread-to-filling imbalance more noticeable.

What it's actually like

Danny Meyer opened Gramercy Tavern in 1994, and under Michael Anthony it has spent three decades building a seasonal American menu around long relationships with local farms and purveyors. The burger lives on The Tavern menu, the more casual half of the restaurant, and it gets the same kitchen attention as everything else served there.

We ate it in December 2025. The burger understands that the meat is supposed to be the main character. That sounds obvious. A lot of expensive restaurant burgers still manage to forget it.

The patty carried the meal, beef-forward with enough char to stay clear beneath the cheddar, crispy bacon, and smoked onion aioli. Every supporting component added to the same idea. The cheddar brought salt and richness. The bacon added crunch, which mattered because most of the rest of the bite was soft. The onion aioli extended the smoke of the char and gave the burger another savory layer without turning the whole thing into a sauce vehicle. Nothing pulled attention away from the beef, and that is why the opening bites were so good.

Then the bun started becoming more noticeable. By the second half it was taking over more of the texture than it should have, and a bite that began as beef, cheddar, bacon, and smoke turned increasingly into bread. The size made that feel even less necessary. There was no huge patty or overflowing topping stack requiring that much bread presence.

Eater called this the platonic ideal of a chef burger. We understand the argument. Gramercy Tavern treats the burger like real restaurant food rather than an obligation on The Tavern menu, and the beef and supporting ingredients justify the reputation. But the platonic ideal needs a better bun.

Why this score

Gramercy Tavern separates itself by keeping the beef at the center of a chef-driven burger. The char, cheddar, bacon, and smoked onion aioli all intensify the patty rather than pulling attention away from it.

The burger begins with excellent flavor balance, but the airy, dry bun becomes increasingly prominent and prevents the construction from finishing at the same level.
