Manhatta serves a deeply savory dry-aged burger built around well-cooked beef, koji onions, Cooper Sharp, and shiitake mayo.
The components create substantial depth and a distinctive umami-forward profile, but the burger needs acidity or brightness to keep the richness from becoming one-note. Its airy, bready bun further weakens the balance.
Best for
Dry-aged beef, umami-forward burgers, koji onions, shiitake mayo, Cooper Sharp, and dining with panoramic Lower Manhattan views.
The catch
The dry-aged beef, cheese, koji onions, and shiitake mayo all push toward richness and umami. A brighter acidic element would provide needed contrast, while the airy, bready bun occupies too much of the complete bite.
What it's actually like
Manhatta sits on the 60th floor of 28 Liberty Street, a Union Square Hospitality Group restaurant with a prix-fixe dining room on one side and a more casual à la carte bar and lounge on the other. Michele Brogioni has run the kitchen since summer 2025. Both of us ate the Dry-Aged Burger there in January 2026.
The patty was the strongest part. Cooked well, seasoned well, and carrying the pronounced depth and light funk that dry aging is supposed to deliver. Then the burger kept adding savory layers on top of it. Koji onions. Cooper Sharp. Shiitake mayo.
Every one of those worked with the beef, and the koji onions and mushroom-based mayo in particular gave the burger a point of view you do not find on most restaurant menus. The cheese added richness without burying the patty underneath it.
The flavor was very good. What it wanted was a cut. Something sharp enough to separate the beef from the cheese, onions, and mayo and reset the palate before the next bite. Nothing in the build played that role, and the bun compounded it by taking up more of the bite than a filling this soft and rich could support.
Manhatta does not need to dial back the umami. It needs something brighter to set against it.
One note for anyone planning a visit: the burger is currently a bar menu item and also appears at lunch, where the menu describes a seeded bun and house-cut potato chips. It is not on the multi-course dinner menu, and the bar takes walk-ins.

Why this score
Manhatta separates itself through the depth of its dry-aged beef and the concentrated savory character created by the onions, cheese, and mushroom-based mayo. The central execution is strong, but nearly every component moves in the same direction.
The lack of acidity and the bready bun prevent the burger from feeling fully balanced.
