NADC serves a highly balanced Wagyu cheeseburger whose richness never becomes exhausting.

What it's actually like

NADC stands for Not a Damn Chance. It started in Austin with professional skateboarder Neen Williams and chef Phillip Frankland Lee, who bonded over skating and cooking and then spent close to two years building their preferred cheeseburger, testing versions through free pop-ups before it became a restaurant. The first East Coast location opened in SoHo in 2025, and both of us ate there in December of that year.

The ingredient list is familiar. Wagyu beef, American cheese, onions, secret sauce, pickles, and slightly tamed jalapeños, currently built as two three-ounce patties. The balance is what separates it.

The Wagyu and cheese create substantial richness and umami. The sauce connects the meat and the toppings, the onions deepen the savory side, and the pickles and jalapeños carry enough acidity and controlled heat to keep the burger from getting heavy. You do not get tired of the bite, which is the whole achievement.

Nothing here depends on an unusual cheese, an elaborate bun, or an oversized topping stack. The identity comes from getting the proportions right, and every richer component is answered by something sharper.

That precision reads as intentional rather than lucky, and it is why the burger holds up against the development story behind it. NADC has expanded well past Austin, but this still tastes more considered than the typical multi-city fast-casual product. The quality of the beef helps. The balance is why it works.
