The 1WS Cheeseburger at One White Street

Brotherly Breakdown

Our own take, from eating it. Written by Brotherly Burgers.

One White Street serves a very good burger whose opening bites demonstrate excellent patty execution and strong flavor balance.

The patty was expertly cooked and seasoned, while white cheddar, thinly sliced onion, and house sauce added richness, bite, and tang. The primary weakness was the airy bun, which became increasingly prominent and began overpowering the burger by the back half.

Best for

Well-cooked patties, white cheddar, rich burgers with onion and tang, ingredient-driven restaurant burgers, and Tribeca dining.

The catch

The airy bun becomes too dominant as the burger progresses. It initially feels light, but by the back half the bread begins to overwhelm the patty, cheddar, onion, and sauce.

What it's actually like

The opening bites had everything working in proportion. The patty was cooked and seasoned expertly, with enough juice and beef flavor to remain the center of the burger, and the white cheddar added saltiness and umami that brought even more richness out of the meat.

Then the thinly sliced onion and house sauce gave it the contrast it needed. The onion added bite. The sauce brought tang. Together they cut through the fattiness of the patties and kept the beef and cheese from becoming one heavy flavor.

Then the bread started taking over. It was airy, which initially made the burger feel lighter, but as we moved through it the back half felt more like bun with burger than burger with bun.

That changed the experience. The beef was still well cooked, the cheddar still worked, and the onion and sauce still provided the right contrast. There was simply too much airy bread between us and the strongest parts of the burger, which is frustrating precisely because the underlying flavor balance was so good.

We only visited once, in December 2025. The current menu describes a somewhat different build, listing American Wagyu, white cheddar, onion, pickles, and a sesame bun, with no house sauce. Treat what is described here as the version we ate rather than what arrives today.

One White Street is an ingredient-driven, Michelin-recognized restaurant inside a historic Tribeca townhouse, sourcing much of its produce from Rigor Hill Farm in Columbia County. The burger fits that approach: a restrained construction built around good beef, cheddar, onion, and contrast rather than a stack of luxury components.

The version we ate was very good. We would want the next one to keep the opening balance intact all the way through the final bite.

Strengths

  • Expert patty cook
  • Well-judged seasoning
  • Juicy and flavorful opening bites
  • White cheddar amplifies the beef
  • Onion and house sauce provide effective contrast

Why this score

One White Street separates itself through an expertly cooked patty and an opening flavor balance in which cheddar, onion, and tang reinforce the beef. The burger loses some of that effectiveness as the airy bun becomes more prominent in the back half.

The strongest components are excellent, but the construction does not sustain the same balance through the finish.
