Raf's makes a genuinely pickle-forward burger, and how you feel about it depends almost entirely on how you feel about that. The house-baked sesame roll is one of the best buns in the city, and the dry-aged patty was so juicy it dripped.

The trouble is that the patty was nearly unseasoned, so the sauce, capers, and cornichons end up carrying the burger instead of complementing it. Some bites had great balance. Others were overly briny, and bites without sauce or toppings left a lot to be desired.

Best for

Pickle-forward burgers, dry-aged beef, house-baked buns, Gruyère, and high-acid builds.

The catch

The acidity is overbearing in some bites. Between the capers, the cornichons, and the tarragon aioli's extra tang, the burger tips salty, briny, and acidic past the point of balance, and the underseasoned patty does not push back.

What it's actually like

Raf's is a French and Italian bakery restaurant on Elizabeth Street from sisters Jennifer and Nicole Vitagliano, and the burger is a restricted lunch item rather than a standing menu fixture. This assessment is based on one visit.

The bun deserves its own sentence. A sesame roll baked in house, and it is amazing. Easily one of the best buns in the city, which matters because the bun is where restaurant burgers at this level most often quietly fail.

The patty is dry-aged and cooked in a wood-fired oven, and it was so juicy it was dripping everywhere, served a touch on the rare side. The Gruyère added richness and nuttiness on top of it. Every individual component here is good.

The failure is in how the flavor is distributed. The patty was nearly unseasoned, which means it does not anchor anything, so the capers, the cornichons, and the sauce end up doing the work instead of cutting through something. The tarragon aioli is herbal and aromatic and adds further tang, which for us was overwhelming.

The result changes bite to bite. Some had genuinely great balance. Others were overly briny. And any bite that arrived without sauce or toppings underdelivered, because there was nothing underneath holding it up. Season the patty and this is a different conversation.

Ordering note: this is a lunch item on a narrow window. The current menu publishes lunch as Tuesday through Thursday, 11:30 a.m. to 2:00 p.m., which is tighter than when we ate it, so confirm before going. The current menu also lists capers without cornichons; we were served both.

Why this score

The bun and the juiciness of the dry-aged patty are strong enough to place this well above an ordinary restaurant burger, and the build is genuinely its own thing.

What holds it back is that the beef does not hold up its end. An unseasoned patty under assertive high-acid toppings produces a burger that varies from bite to bite instead of resolving, and the weakest bites have nothing to fall back on.
