Rolo's serves an exceptional beef-first burger built around smoke, seasoning, and unusually strong meat quality.
The two patties stay juicy and carry a deep wood-fired flavor through every bite, while the grilled onions, dijonnaise, and unobtrusive bun allow the beef to remain the main character.
Best for
Beef-first burgers, wood-fired smoke, juicy double patties, grilled onions, and limited Ridgewood burger trips.
The catch
The burger could use a stronger acidic counterpoint. The dijonnaise provides some sharpness, but the reviewed bite remained primarily smoky and rich.
Daily quantities are also limited, and Rolo's recommends arriving before 6 p.m. for the best chance of ordering one.
What it's actually like
Rolo's is smoke, beef, and execution. The restaurant receives a side of New York State grass-fed beef every week, butchers it into steaks, and grinds the burger meat in house. That level of control is obvious when you bite into it.
The two patties were insanely juicy, properly seasoned, and intensely beef-forward. The wood fire carried a smoky flavor through every bite without turning the burger into a smoke show that forgot about the meat.
The grilled onions supported the savory profile, and the dijonnaise provided a subtle hint of sharpness. The bun held everything together, stayed out of the way, and let the burger taste like beef.
That sounds basic. It is not. A lot of burgers add flavor by stacking more things on top. Rolo's gets there through the quality of the meat, the seasoning, and the wood fire.
Our only note is acidity. The current menu lists a pickled long hot, but we are reviewing the burger we ate rather than correcting our memory with a menu after the fact.
We ordered it without bacon because we try every burger as recommended. A few friends at the table added bacon, and we stole enough bites to know that we need to go back and order it that way ourselves. That revisit is happening.
Rolo's is already an incredible burger without bacon, and a little more acid could push the balance even further. We will be back to find out what the bacon does.

The burger would benefit from a brighter acidic cut, but the quality of the meat, seasoning, and overall construction make it an exceptional burger worth revisiting.
