Sin City Burger makes good no-frills burgers with juicy patties and toppings that work. We ate two, and the Guilty was the more interesting: pickled red onions, spicy Sin sauce, avocado, and cheddar gave it heat, tang, and creaminess all at once.
The recurring problem is the sauce. Some bites ran sauce-heavy, and the richness sometimes covered the beef flavor instead of letting it come through.
Best for
No-frills burgers, Sin sauce, pickled red onions and avocado, heat and tang, and Upper East Side counter burgers.

What it's actually like
Sin City Burger is a counter operation on East 76th Street with a named Angus burger range, and we ordered two of them. This assessment is based on one visit.
The Temptation is the classic: cheddar, Sin sauce, caramelized onions, and pickle relish. It is a rich, sauce-forward build by design.
The Guilty is the better one. Pickled red onions, spicy Sin sauce, avocado, and cheddar produce a genuine mix of heat, tang, and creaminess, and the balance reminded us of a California burrito. Swapping caramelized onions for pickled ones and adding heat gives that version real contrast inside it, which the Temptation does not have.
The fundamentals underneath both are good. The patties were juicy, the toppings were good, and the bun was light and airy with a good crisp on it.
The one real criticism applies across both. Some bites ran sauce-heavy, and when they did the richness sat on top of the beef rather than beside it. Dial the sauce back and the good patty underneath gets a chance to show.
For what this is, and it is a counter rather than a restaurant, it is executed well.

Why this score
The fundamentals are right and the Guilty in particular is a well-constructed burger with real contrast built into it, which is more than most counters at this level manage.
What keeps it where it is, is that the sauce works against the beef. A build this rich needs the patty to stay legible, and in a number of bites it did not.
