Suprema Provisions builds a soft, jammy, savory-sweet burger that is very high in umami, and we enjoyed the flavor of it. The cured pork jam, black garlic sauce, and aged cheddar make a genuinely rich combination.
Its problem is an unusual one: it is almost too cohesive. The ingredients blend into one another rather than staying distinct, so the flavor concentrates as you go instead of resolving. The roasted tomato is the one component giving the burger lift, and there were not enough bites with it.
Best for
Umami-forward burgers, jam-based toppings, black garlic, aged cheddar, and West Village Italian dining.
The catch
The burger has no cut. The jam, the black garlic sauce, and the cheddar all push the same savory-sweet direction, and nothing interrupts it.
What it's actually like
Suprema Provisions is an Italian restaurant in the West Village carrying a single burger: a short rib and brisket blend with a cured pork jam, black garlic sauce, aged cheddar, and roasted tomatoes on brioche. The restaurant's menu calls the jam an iberico jamon bacon jam; our own notes called it prosciutto.
The flavor works. Soft, jammy, savory-sweet, very umami, and the cheese, sauce, and jam together produce something genuinely solid. The beef itself was decent, and it is not what makes or breaks this burger either way.
The failure mode is worth being precise about, because it is the opposite of the usual one. Most unbalanced burgers have a component that dominates. This one has no component that stands apart at all. Everything melts into everything else, and with nothing sharp interrupting the sequence, the flavor accumulates rather than resolving. By the end it is concentrated.
The roasted tomato is the exception and it proves what is missing. When you got tomato, the burger opened up. Those were the best bites we had, and they were few and far between.
Give this build one acidic element and it becomes a different burger. The flavor idea underneath is strong enough to deserve it.
